WHAT'S THE STORY:
Legend has it that Genmaicha was invented when a samurai's slave accidentally dropped rice into his master's tea. Rather than sample the serendipitous concoction, the hasty samurai severed his slave's head as punishment. But the brew turned out so tasty that the samurai was forced to forgive his slave - and honour him by giving the tea his name, Genmai
Preparation:
Use one bag for a cup, or two dfor a large mug, pour on freshly boiled water and allow the tea to brew for a good four or five minutes - the active botanicals need this time to release all their valuable essential oils. If you cover the mug while brewing, or use a teapot, you'll keep even more goodness in.
You can make a pint of iced tea by brewing six bags in a single cup of boiling water. Then add two cups of chilled mineral water and plenty of ice cubes. Add sugar or honey if you like it sweeter.
